以新派粵菜和造型港點聞名，且有新北第一粵菜的望月樓，自即日起，由行政主廚邱龍俊聯手資深點心港廚徐金有，以固本創新為題，並結合各式海陸食材推出20多道新菜，給予饕客充滿新意的餐飲體驗。

望月樓的行政主廚邱龍俊的廚藝資歷豐富，曾任維多利亞酒店礁溪長榮酒店與桃園大溪威斯汀酒店等，而廚齡超過五十年的港籍點心顧問徐金有，則師承港點大師大佬強陳銓強，直至1990年，被禮聘來台擔任竹家莊的點心主廚，至今更有累積有超過20年的餐飲經驗，且於2016年底，加入望月樓迄今，廚藝備受肯定。

而由近期望月樓以固本創新為題所推出的20多道新菜，包含蔥香麻辣牛腱乾煸火腿四季豆附麵餅廣式老火例湯珍珠肉日月魚石斛湯椒鹽脆皮牛小排蠔皇墨瑞鱈魚香檳茸南非鮮鮑燉肉佐野米鮑魚燒賣與鮮蝦白兔餃等。

其中，一道蔥香麻辣牛腱，讓人感受猶如川式涼菜紅油牛肉的爽口香辣，加入歐盟產地認證的法國頂級拜雍火腿(Jambon de Bayonne)入菜，另佐以柔韌麵餅，可品嘗到四季豆的乾香鍋氣結合麵餅的口感嚼勁一道廣式老火例湯，又名珍珠肉日月魚石斛湯，特選每公斤要價近三萬，且矜貴奢華的珍珠肉曬乾的蚌肉入饌，並加了深海貝類日月魚，以及一同煲煮的還有豬龍骨腰內肉陳皮南杏淮山蓮子栗子與夏季消暑的佛手瓜等多種食材，再經熬煮近三小時，呈現出濃郁湯汁，且溫潤口感的滋味。

此外，一道椒鹽脆皮牛小排源自於港澳米其林三星餐廳也可見到的脆皮牛腩，選用美國牛肉最高等級的Prime帶骨牛小排，經香煎慢滷至油炸等步驟，最後呈現出口感猶如粵菜版的威靈頓牛排的外酥內嫩口感，十足美味。

而一道蠔皇墨瑞鱈魚香檳茸，則源自香港酒樓中常見的蠔皇炒斑球，改用本地少見以宜蘭山泉水養殖一公斤要價上千元的墨瑞鱈入菜，再搭配每公斤進價三千元的台版松露香檳茸，鮮味加乘一道南非鮮鮑燉肉佐野米的靈感則來自鮑魚紅燒肉，另融入營養價值高的加拿大野米與南非活鮑等食材，呈現出鮮美豐腴的滋味。

至於港式超賣，則推薦鮑魚燒賣鮮蝦白兔餃錦繡山竹果與蜂蜜柚子糕。其中，最具賣相的是鮮蝦白兔餃，由於精準掌握了燙麵技術二種澱粉的比例，另拍皮技巧，讓蝦餃皮呈現薄中帶韌，包入蝦膠，再捏塑成小白兔造型，蒸熟後白裡透紅，十足啟人食慾。
