由國泰集團創辦人蔡萬春之子蔡辰男所創辦，目前隸屬於御嵿國際的海峽會，近期以頂級燕窩鱈場蟹及現流海鮮等多種食材入饌，在館內的台粵辰日本料理等多間餐廳推出各式美味套餐。

台粵中餐廳推出的御萌饗燕套餐，融匯粵菜與川湘蘇浙靈感，其中，開胃菜蕃茄澄清鮮貝凍啟發自法式澄清湯，入口清雅鮮潤香煎薺菜紅條魚以薄透千張皮包裹鮮魚與薺菜豆乾丁，香煎至金黃微酥，豆香與魚鮮層層交織主菜柱侯澳洲和牛頰經高溫鎖汁後細火炆燉逾兩小時，肉質軟糯且膠質豐盈甜點燕窩香草塔則將古法泡發的印尼燕窩融入馬茲卡彭起司與香草鮮奶油，質地絲滑輕盈。

SHABU SHABU懷石火鍋則以御海盛宴套餐為主軸，精選日本鱈場蟹澎湖現撈鮮魚大分縣生蠔南非活鮑魚及美國去骨牛小排等頂級食材，展現奢華海味。迎合夏季，餐廳特別祭出全新冬蔭功鍋湯底與Mama泰漂亮套餐，湯底以蝦米發酵辣椒醬與羅望子炒香，融入椰奶南薑與檸檬葉慢火燉煮，入口酸勁清爽尾韻辛辣鮮香，豐富的香料層次開胃帶勁，讓人欲罷不能。

辰日本料理的辰壽司本季以松葉蟹為題，首推每日手工揉製的松葉蟹真丈，口感紮實清甜，佐以春筍與羅勒油溫潤開胃障泥烏賊海膽嚴選鳥取縣障泥烏賊與濃郁海膽，裹上天婦羅麵衣酥炸，外酥內柔，並以胡麻油與紫蘇花優雅提香松葉蟹蔥油釜飯在熱油淋下的瞬間激發蔥香與蟹鮮，深刻鎖入Q彈米粒中，品嘗時蘊含米香。
鯖魚棒壽司。
辰割烹則主打京都正統技藝並擷取春日旬味，以京都手工豆腐點綴生湯葉與愛知縣柚子，用濃醇豆香為味蕾揭開序幕本鮪魚腹肉微炙引出豐潤油脂，搭配細滑山藥泥與山椒醬油，在濃淡間流轉出細緻節奏白魚天婦羅佐以糯米椒與山椒鹽，展現精準火候。最後傳承自京都傳統手藝的鯖魚棒壽司將醋飯揉合大葉薑片與芝麻，並以昆布包覆，清爽微酸完美平衡鯖魚的豐厚油脂，展現京都壽司的典雅與沉穩。
