因 Netflix黑白大廚：料理階級戰爭而受到矚目的韓國主廚宋夏瑟蘭Song Ha Seul Ram，將於2026年7月3日至 31 日客座台北晶華酒店，以他在首爾所創立的人氣餐廳MAMALEE 為概念，帶來融合韓國西班牙與現代 Fine Dining 精神的多種創新料理，包含當代韓式定食Bansang，也打造適合搭配美酒的韓式小菜Banchan等，顛覆大眾對韓國料理的既定印象。

宋夏瑟蘭與韓國米其林三星餐廳Mingles主廚姜珉求Mingoo Kang熟識，兩人共同旅居西班牙習藝而結識，後來不約而同受到西班牙餐酒館文化的啟發，兩人返韓後共同創立MAMALEE，由宋夏瑟蘭擔任主廚，重新詮釋韓國餐桌上不可或缺的小菜文化，並將原本作為配角的韓式小菜提升為料理的主角，而他也因擅長運用韓式小菜創作，受到評審安成宰盛讚，並形容他的作品蘊含一般人看不見的細節。

而他此次客座台北晶華，最具代表性的招牌料理莫過於 韓式蓮藕炸雞，他突破傳統韓式炸雞搭配薯條的組合，改以炸至金黃酥脆的蓮藕片取代，不僅增添爽脆口感，也讓整體風味更具層次，外酥內嫩的雞腿肉裹上特製韓式甜辣醬後，依舊保有酥脆口感，成為MAMALEE最受歡迎的招牌菜色，另一道推薦料理則是鮮蝦羽衣甘藍煎餅，以韓國經典煎餅為基礎，加入鮮蝦與羽衣甘藍等食材，兼具清爽與鮮甜。

位於一樓的 azie，則推出四款韓式定食，包括美國牛肉餅辣醬炒豬肉紅燒馬加魚及美國牛小排，每套皆搭配多款韓式小菜，透過醃漬涼拌燉煮與拌炒等不同技法，展現韓國餐桌文化豐富而細膩的飲食樣貌，此外，也同步推出融合韓國風味與義式料理元素的韓義套餐，包括韓式辣醬義大利麵與鮑魚糯米燉飯等。

二樓上庭酒廊則延續MAMALEE餐酒館概念，推出適合多人分享的酒吧小食，包括韓式蓮藕炸雞鮮蝦羽衣甘藍煎餅羅勒章魚沙拉辣炒年糕麵及奶油明太子寬扁麵等特色料理，另可選擇搭配羅勒春茶香柚碧螺春烏梅烏龍及蜂蜜蘋果等四款創意調酒，一享餐酒饗宴。
