台北高端餐飲市場再添新選擇！斥資近2億元打造的宇方圓日前於台北微風松高的地下2樓正式開幕，融合高檔精緻中菜13間包廂空間與KTV等社交娛樂功能等，鎖定商務宴客私人聚會與高端社交需求，打造有別於傳統餐廳與私人招待所的新型態餐飲空間。

宇方圓由軒寓閣樓府旺股份有限公司投資成立，曾任嘉林餐飲海峽會，且打造米其林三星Tarroir 態芮餐廳的執行長林奕寬表示，早於疫情前，就有不少客人向他建議，過去不少企業主或私人聚會，往往需要先在餐廳用餐，再轉往私人招待所進行唱歌打牌或其他活動，不僅需要移動，也容易打斷聚會節奏，因此，希望有融合高端餐飲社交娛樂的高端餐飲空間，因此，自2022年起籌備超過3年時間，終於開設了宇方圓。

不同於一般餐廳，位於台北微風松高地下2樓的宇方圓擁有約500至800坪空間，並設有專屬車道直達餐廳，兼顧交通便利與隱私，全館規劃13間包廂，從10人小型聚會至30人大型宴會皆能彈性運用，並透過挑高格局雙層天花及聲學工程，降低包廂間的聲音干擾。除了用餐，部分包廂亦具備視聽桌遊及娛樂機能，讓商務洽談私人聚會與餐後交流都能在同一空間延續。

至於菜色，宇方圓由曾任職於新加坡四季酒店紐約華爾道夫酒店與曼谷文華東方酒店的鄺啟明擔任廚藝總監，吳宇軒則是行政主廚，兩人以粵菜為基礎，結合不同中菜技法與西式料理概念在開幕之初，推出燶邊叉燒皇三弄砂鍋濃湯干貝燉富貴雞玫瑰醋栗靚蝦球鬼佬酒醋小炒骨及惹味烏參海鮮餃等菜色。

而一道法國皮蒂維亞和牛鹹派以西式威靈頓牛排為靈感重新設計的菜色，選用美國菲力，外層不採傳統的鵝肝與蘑菇，而是融入中菜元素，以乾貨等食材重新打造風味層次，再透過菠菜包覆肉品，減少肉汁滲出對酥皮口感的影響，呈現中菜與西式料理技法交融的風格，一道純粹螺頭湯則以甘蔗雞慢火熬製湯底，加入瑤柱與蝦乾提鮮，再放入螺頭浸煮，讓雞肉的醇厚與海味的鮮甜層層交融，品嘗時，更能感受湯頭清澈，入口鮮甜，尾韻溫潤。

而餐後甜點也延續中西融合概念，其中情人果檸檬塔以醃製情人果搭配柑橘冰，並加入40年陳皮，透過酸甜冰涼與陳皮香氣交織，作為餐後收尾。
