越南近年持續成為台灣旅客熱門的海外旅遊目的地，根據交通部觀光署統計，2025年全年台灣赴越南旅遊人次約達123萬越南國家旅遊局日前公布的觀光統計，台灣旅客更位居越南國際客源市場第四位，僅次中國韓國與俄羅斯。

在亞洲各色料理中，越南料理的特色鮮明，作法通常是運用香草香料湯底與醬料堆疊風味，並融合歷史上法國殖民時期留下的飲食文化，形成兼具清爽酸辣鮮香與濃郁層次的獨特風格，而在台北餐飲圈，若想品嘗越式料理，一間位於台北大巨蛋遠東 Garden City 7樓，且日前正式開幕的Maison Viet 越舍，將越南料理與法式料理技法當代空間美學結合，提供了給予傳統越式餐館的用餐體驗。

走進Maison Viet越舍，可見由形構設計設計師方俊能操刀的餐廳空間，以松柏綠白曜黑等作為主要色彩，另搭配由幽境影像Ardent Wei打造的牆面視覺藝術，並融入插畫與當代影像語彙，營造出帶有殖民地時期法越文化交融特色的空間氛圍，也帶來獨特的異國情調。

料理方面，Maison Viet越舍由越籍主廚陳玉生與具有歐法料理背景的台籍主廚共同研發菜單，保留越南料理的核心風味與香料特色，同時運用西式料理的烹調概念與擺盤方式，讓越南料理耳目一新。

而在Maison Viet越舍可品嘗招牌參巴醬炒飯肋眼牛排6 oz精燉椰汁東坡肉經典生春捲拼盤越南班煎燒越法油封鴨腿越式羊腩煲越式青椒辣雞湯以及越式滷水春雞等多種菜色。

其中，招牌參巴醬炒飯肋眼牛排6 oz以參巴醬搭配香料快炒，炒飯粒粒分明，香氣集中而帶有辛香感，再搭配煎至外香內嫩的6 oz肋眼牛排，牛肉油脂的甘甜與炒飯的辛香形成對比，成為菜單中兼具飽足感與風味辨識度的一道主食。

精燉椰汁東坡肉則將中式經典燉煮概念融入越式風味，以椰汁慢燉豬肉，使肉質吸收椰汁的香氣與鹹甜滋味，再搭配蔬菜與鴨蛋，利用清爽配料平衡燉肉本身較厚實的口感。

喜歡越南經典小吃的話，越南班煎燒則是值得一試的選擇，金黃酥脆的外皮包入豬五花蝦仁與時蔬，再搭配魚露蒜辣醬，酥脆鮮甜與酸辣滋味交織。

越法油封鴨腿則以油封方式料理鴨腿，搭配椰奶芋泥與藍莓醬，透過溫潤甜味與微酸果香平衡鴨肉的油脂，再加入蒜燻培根炒蘆筍與炙燒玉米，多種鹹甜滋味融合交織。

另一道越式滷水春雞，則以越式滷水與香料醃製入味，雞肉外香內嫩，帶有鹹香回甘的風味。，搭配蔥薑魚露醬甜椒魚露辣醬與檸檬葉鹽三款佐料，可以依照個人口味調整沾醬，從鹹香酸辣到清新的草本香氣，呈現不同風味組合。
